My OCD, tastebuds, and eggs can't seem to get along and that is so evident when it comes to eating eggs. I enjoy making egg dishes for others but only eat the egg whites if the yolk is separated. Like I said before the OCD does not play nice with the other children in the yard. As for deviled eggs, there was something too blah about them that never quite intrigued my taste-buds either. So one day my friend Dean Lee who knew liked caviar, a good omelet & was a cheese eating fool decided to experiment with Deviled Eggs, The result was what he calls 'Neptune's Eggs'.

These eggs right here are a hit every time he served them at his shindigs and always have people asking for the recipe.

They look great on any table when you are entertaining and they do give the impression that you're stepping up on your culinary game. There's nothing wrong with getting a little bougie with the food and getting fancy with the spices.

Neptune's Eggs Recipe - Makes 24 halves

Ingredients

12 Eggs

1 5oz Can of Smoked Salmon (Drained and flaked) or 4 ozs. Premium Sliced Smoked Salmon (Chopped finely)

1 oz Caviar (He used black caviar but you can buy whichever kind you like)

1/2 Medium Onion Diced

1 oz Mayonnaise

2 Tbsps Champagne Honey Mustard

2 Tsps Chopped Dill

1/2 Tsp of Garlic Powder

Paprika

How It Done

For the eggs his brings them to a boil in enough water to fully cover them. Once they water starts bubbling vigorously he turns of the heat, covers the pot and allow the eggs to stand for about 15 minutes. Then the eggs are drained and shelled.

Cut the eggs in half and scoop the yolks in a medium size bowl.

Place the egg whites in the refrigerator while you prepare the filling.

Add all the ingredients to the bowl with the egg yolks except for the paprika and caviar. Use a fork to combine everything as it helps to give the mixture an even consistency.

This can be put in a piping bag and placed in a refrigerator for up 2 hours (its best to place these minutes before your guests arrive)

Grab that sexy serving tray you have been dying to use and assemble your chilled egg whites on it. (Lettuce leaves or Seaweed does give presentation that under the sea look)

Pipe the yolk mixture in the white halves and bare in mind height in your dishes make them prettier in pictures. Dust each egg with a dash of paprika and then finish with about half a tsp of caviar for each half.

One inch slivers of fresh chives gives it more brownie points as being Social media worthy food.

Hope you enjoy it when you try because we did it ....For The Love Of Food
